Because avocado toast is so vanilla.
(recipe for one, for obvious reasons)
- 1 fresh garlic bulb, top cut off
- 1 thin slice of lemon
- olive oil
- a sprig of fresh thyme
- salt and pepper
- good (sourdough) bread
- goat’s cheese spread (optional)
Pre-heat the oven to 170°C. Pour a thick layer of olive oil into the dish, for the bulb to sit on (roll it around to make sure it’s well covered in oil). Add the lemon and thyme, salt and pepper, put the lid on and roast for 40 mins. In the last five minutes, toast a thick slice of bread, crack open the Sauv Blanc and prep the goat’s cheese.
Squeeze out the cloves, spread on bread (my dad mixes garlic and goat’s cheese, I alternate) and don’t hesitate to use the oil for dipping – it’s delicious, infused with garlic, lemon and thyme. Yum!
