A bright and quick dinner bowl for the first warm day of the season.

- 1/2 mango, cubed
- 1/4 block feta cheese
- 1 small spring onion
- juice of 1/2 lime
- 2 handful sprouts (I used a mix of mungo bean, lentil and wheatgrass)
- sprig of fresh thyme
- pinch of fresh lemon balm or mint
- 1 tbsp pistachio oil or hazelnut oil
- freshly ground black pepper
Chop the spring onion incl the green bit finely, squeeze the lime juice over it and let it sit while preparing the rest, this should take the raw edge off and soften the onion taste.
Cube the mango, pull the thyme leaves off their stems unless you want toothpicks included, mix with sprouts, herbs, the marinated spring onions (add a little more lime juice if needed), season generously with pepper and top with crumbled feta. Drizzle your fancy oil over the bowl, mix well and you’re done.
