There is no excuse not to try this. Takes 10 minutes, tastes ridiculously amazing. Make it for a date and they will think you creative, effortlessly cool and adventurous, and instead of that guy who googles “what to cook for a date easy recipe” (shh, I won’t tell).
Slice papaya thinly, cut salmon fillet lengthwise, salt and rub it generously with mild chili flakes. Dry roast cardamom seeds (black if you can find them, otherwise green will do nicely) for 2-3 mins, then add coconut oil, the fish, papaya, a handful of fresh coriander and a bit of macis (substitute nutmeg if you like). Give it a minute or two, then flip the fillets over and squeeze 1/2 a lime over it. When the salmon is done to your liking, serve with a nice crisp white – Cloudy Bay Sauvignon Blanc from New Zealand comes to mind :)
