Oven-baked Pumpkin

Oven-baked butternut is amazing, but so is Hokkaido – just stab it a couple times, rub a bit of oil into its skin and plonk in the oven for at least 45 mins or as long as it takes the roasted-pumpkin smell to permeate your flat. Let it cool a bit, grab a big spoon, some ground coriander, salt and chili flakes, flop in fron of the TV and enjoy November at its finest.
