Roast any and all vegetables you find lurking around sadly in the back of the fridge. Assure them that you still love and value them, then chop roughly, toss with a tsp oil and flaky sea salt and stick under the broiler until nicely browned.
Meanwhile, cook a cup of quinoa (I used three-colour quinoa, but regular one will do nicely). Add miso paste to the cooking water if you like.
The third layer is feta cheese and fresh radishes.
Voilà, not sad desk lunch!
